Vegan & Raw: Avocado Pesto Sauce with Zucchini Noodles

Avocado Pesto Sauce with Zucchini Noodles

Prep time: 10 mins

Serves 2

 

Ingredients:

1 large zucchini (longer than it is wide to fit in Veggetti)

4 cherry tomatoes (cut in half for garnish)

1 avocado

1 cup basil (tightly packed)

Juice of ½ a lemon

1 garlic clove

1 ½ tablespoon olive oil

A pinch of high quality sea salt

For Sauce

In a Vita-mix, blender or food processor combine all the sauce ingredients and blend for 1-2 minutes until thoroughly combined and the sauce has a smooth texture.

For “Noodles”

KC used a Veggetti to create the zucchini noodles. You can also use a Spiralizer or just cut the zucchini into thin noodle-like strips.

For Assembly

Divide the noodles on to two plates, divide the sauce onto the noodles and garnish the plate with cherry tomatoes. Voila!

EXTRA TIP FROM KC:

If you want this recipe to have more warming, fulfilling qualities you can steam or gently warm up the zucchini noodles in a pan. You can also toss the sauce with your favorite pasta just after cooking for a heavier meal or top with grilled chicken or grilled portobello mushroom if you want to add some protein.
